Coconut Quinoa Brekkie Mix

DELLYs BACK! –  Guest postin again – because she is amaze and also because I am a lazy so and so and didn’t pre prepare anything, then had a last minute dinner outting andddddddd so on and so forth, so, moving on, SUPRISE YUMNESS, which is:

I’m a recent convert to Quinoa – and to be honest, still playing around with how to use it and how I like to eat it! I’ve discovered many amazing recipes that are so chock full of iron and protein I’m a little bit delighted… especially as a gluten-intolerant-trying-to-be-healthy person who falls prey to snackdom at work. Promised to keep you full until lunchtime – except of course if you have lunch 8 hours after your breakfast…

This warm winter breakfast has that hint of coconut in the quinoa – perfect for when it gets that bit too cold for your regular yoghurt or smoothie. If taking to work, box the cooked quinoa seperately to heat once you are comfortably in your office. Play around with the toppings and quantities – this recipe is loosely adapted from Tiffany Halls ‘Fatloss for Good’ cookbook with adjustments to quantities and ingredients. Some mornings I add a little bit of greek yoghurt on top as well…. whatever you like, add it on in!

Serves 2
1/4C Coconut Milk (reduced fat if thats your thing)
1/4C water
1/2C Rinsed Quinoa
1C Mixed berries
1/4 tsp ground cinnamon
Shaved Coconut
Cacao Nibs
Chia Seeds

Combine Coconut milk with water and Quinoa in a small saucepan and bring to the boil over high heat. Reduce heat, cover and cook for a further 10mins until liquid is absorbed. Turn off heat, stir and let stand for 5 mins. Stir through cinnamon. Portion into serving bowls – add berries on top with desired amounts of shaved coconut, chia seeds and cacao nibs.

ps. 130 Cals per serve, whats not to love!

~ Its Tuesday again which is amazing because that means MONDAYS passed and HUMP DAY is upon us, so, linking in with JESS for some IBOT action, you know the deal, and if you don’t.. just ask! ~

Me - I have never thought of having quinoa for breakfast to me it has always been a rice substitute – I may have to give this a try – especially now that the mornings are getting chilly and oats is off the menu.
Have the best day !

Lyndal - Oh! L! I thought of you the other day – I picked up an old old fitness mag at home and they had a weekly paleo meal plan. TBH I hadn’t thought of quinoa for breakfast, but it brings a good amount of savoury to often too sweet breakfasts xx

Liz @ Clover Feet - Quinoa and shredded coconut is my favourite for breakfast. It’s so great that you can cook a batch at the begining of the week, store it the fridge and just heat up a portion for breakfast every morning.

Twitchy - Loving ALL the things in this- just about listed all my favourites. Am so curious to try cacao nibs too. I love a ‘purple porridge, blueberry) in Winter and am also off wheat at the moment, so have been having rice. This has just been bookmarked! #teamIBOT

the_wolf_of_oz - Seriously ??

Whats wrong with bacon and eggs ?
Hash brown ?
Toast ?
Maybe a sausage.

And if you want “greens” add a tomato !

Why on earth would you eat something I cant even pronounce !

Seana - Sydney, Kids, Food + Travel - That looks fantastic and I need a brekkie quinoa recipe, about to clip to Evernote. Thank you!!

May 21, 2013 - 6:32 pm

Rachel @ The Kids Are All Right - This looks absolutely delicious. I would totally eat it if someone put it in front of me. Thing is, at 6am, the most effort I can muster is a cup of tea and piece of toast 🙂

May 21, 2013 - 9:20 pm

Deb @ Home life simplified - I tried quinoa on the family once and it was bland and yuck and i have been too scared to try again but i know i want to and need to – this might fit the bill for me (even if they don’t try it lol)

Lyndal - Oh, I hear you Rach – that 6am time is just evil!!

May 22, 2013 - 8:40 am

Lyndal - oh deb – i hear you on this one… it took a bit of experimenting for me to find ways i actually enjoyed it. Coles stock a brand called celebrate health and do tomato&Basil, Lemon&Thyme and medditeranian flavours which i found so helpful when i was getting used to the texture and taste…

May 22, 2013 - 1:53 pm

Jenn Unger - Yum!! Looks delish. I’m doing quinoa flake and chia ‘porridge’ at the moment – just cover with enough boiling water to soften really then add yoghurt/nuts/seeds/fruit etc… Will have to try this recipe out 🙂

May 23, 2013 - 7:51 am

Lyndal - Let me know how you go Seana, enjoy!! x
